The new Battle.net 2.0 cross-game, RealID chat system is being released, in full, today. This is going to be the first legitimate release of the software in a working client. Safe to say the protocol won't be changing entirely after this point.

An AIM-like client would be badass.

No. World of Warcraft just got this feature. There's not much use for it right now, other than cross-faction/realm chat. Once SC2 and D3 come out, though, it will be extremely awesome.

I would probably except MyndFyre to do it, since he has the whole WoW protocol figured out.

The new mobile chat thing should be easy to figure out, especially if anyone knows ARM assembler.
I'd personally do as Joe suggests
