What exactly is an x86 machine? I've been interested in starting programming/ white hat hacking and have seen websites mentioning x86 machines.

x86 is intel's architecture. You might remember the i386 and i486 cpu's -- those were the older x86 variants.
Technically, the 486 was a "Intel 80486" or the family is "intel 80x86" which gets shortened to ix86 usually.
