Title: Fancy Vegetarian Menu

I figure this is the best place I know of to ask (my gun site seems to have a lot of ppl confused by vegetarianism).  Any who, my roommate is a vegetarian, and I'm sleeping with her (bad idea, but whatever).  Tonight we're going to the symphony, and I am resolved to fix a fancy feast...problem: vegetarian.  It's hard for me to view vegetables as anything other than side dishes...just how I was raised.

So far I'm thinking: scalloped tomatoes (http://allrecipes.com//Recipe/scalloped-tomatoes/Detail.aspx) and orange infused peppers. (http://www.eatingwell.com/recipes/orange_infused_roasted_green_beans_red_peppers.html)

Any other thoughts on easy veg menus?

Greek spinach pie (http://www.foodnetwork.com/recipes/emeril-lagasse/spanakopita-recipe/index.html) and quinoa? (http://allrecipes.com//Recipe/quinoa-tabbouleh/Detail.aspx)

A trick to cooking with vegetables, while still having good food, is to cook with carbs: pastas, rice, pizza, etc.  You can easily make any of those without meats and still have an awesome meal.

I did the spanakopita and the quinoa tabbuleh.  that tabbuleh dish was pretty friggin tasty
