Die, heathen! Pineapples rank high on the "difficulty" thing, since they're sticky and messy and a pain in the ass to cut, but they're so tasty! Somebody needs to write a Web survey where people are given a random fruit that they have to rank both on flavour and easiness, and they can keep going and doing more fruit if they want. *looks at Sidoh*

I've tried several knives, both sharp and serrated, none work well. Maybe we have tough Winnipeg tomatoes here..
I have a good knife set that I sharpen on a regular basis. I still find that when I cut tomatoes, they end up squishing. Maybe the tomatoes' skins are too hard while the innards are too soft. *shrug*

Sharpening a knife correctly is not an easy task, and you might just be rounding the blade.EDIT: Freshness and ripeness can factor in a lot as well.
