There's a good reason for that, and it's the same reason Google fights people saying "Googled" -- if a word enters the language as a common word, it can no longer be trademarked, so Adobe loses bigtime.

I just think it's funny. We should all use the word photoshop as a verb so they get screwed. :D

And what about Microsoft with Windows? Isn't that copyrighted?

It depends on what market its being used in; Windows isn't a common word in the computer science area, so Microsoft can retain its copyright. I think thats why they let Apple and Cisco both use the brand iPhone, since they were in different markets.

If you're a professional or something that uses Photoshop and you have something along the lines of "photoshopped" on your website, then yeah, I think they could press charges.  Not that I agree with it, though...

It's possible, but not likely. In my case, since I do editing for corporate blogs, I have to be careful that incorrect nouns aren't verbed.
