Good Vegan Recipie I found

It's cherry cobbler btw :P

    * *CRUMBLE TOPPING* 1 1/2 cups shredded coconut
    * 1 1/2 cups walnuts (Optional: Soaked and dehydrated to make them dry and crispy. If you don't have a dehydrator, then simply toast in the oven at 400 degrees for 5 minutes or so, but F.Y.I. -- the recipe will no longer be raw.) ;O)
    * 1/2 teaspoon salt
    * 1/3 cup pitted dates (medjool)
    * *FILLING* 3 cups cherries, frozen, thawed and drained
    * 1/2 cup pitted dates
    * 2 teaspoons lemon juice
    * 1/8 teaspoon cinnamon

1. Make the crumble topping: Process all ingredients in a food processor except the dates. Add dates one at a time to form coarse crumbs.

2. Make the filling: In a blender, combine 1 cup cherries with dates, lemon juice and cinnamon. Toss with the remaining 2 cups cherries.

3. Put cherry mixture in a square glass baking dish. Top with crumble topping. Refrigerate until ready to serve. Alternatively, you can put the cherry mixture directly into serving dishes and top with crumble topping.

Serves 3 -- recipe can be doubled.

how can cherries be frozen and thawed?
You put them in the freezer till they freeze, then remove them till they thaw?

I think the original creator of the recipe had frozen cherries which he thawed, and drained.

And by frozen I mean already frozen like bought from the store frozen :P

The cool part about this recipe is that it's glutton free as well, which is important in my family (my stepmom is allergic to glutton) :)

Glutton is a compound (or whatever) found in wheat and things similar to wheat (spelt, barley, etc).

My stepmom is highly sensitive to it -- a few crumbs or a trace of flour and she's in the bathroom for hours. It's not a pretty condition, she basically can't eat at restaurants as a result.

I've been unofficially diagnosed with Celiac's Disease just last month :(

I'm still young so it doesn't affect me nearly as badly as your mom (or a couple of my relatives), but I have stick to eating a gluten free diet to avoid later intestinal damage.  Fortunately, being surrounded by other people with similar food allergies makes it easier to make sure I'm not getting any gluten where I think I'm safe.

Yeah, culture is a very important factor. It's easier when people around you eat the same way for sure.
